COOKING WITH JUDGE PATRICIA Di MANGO FROM THE TV SHOW HOT BENCH!













This week, Firehouse Kitchen had the pleasure of cooking with a special guest.

Brooklyn native, Judge Patricia Di Mango, from the TV show Hot Bench, filmed an episode with Host, Ray Cooney, while promoting her new cookbook;

Doing Justice to Pasta

She prepared a classic old Italian comfort dish originating from Naples Italy called "Pasta E Piselli"

This is a simple one pot meal that can be prepared with only a few ingredients, that is absolutely delicious & it only takes about a half hour to make.

The peas blended with the sauted onions and the olive oil to create a hearty, silky smooth dish that was fantastic.

Of course we supplied the basil infused olive oil from the Saratoga Olive Oil Co. which only added to the flavor of this delicious Pasta E Piselli recipe.

Judge Di Mango will be donating a portion of her proceeds to one of her favorite charities, The Saint Jude's Children's Hospital.

Here is the Pasta E Piselli recipe from the book.

Ingredients

- 1lb of tubettini pasta

- 4 tbsp of olive oil

- 1 tbsp unsalted butter

- 1 chopped med-large yellow onion

- 1 cup of diced pancetta

- 1/4 tsp or more of red pepper flakes, to taste (optional)

- 2, 15oz cans of peas, drained

- S&P to taste

- 8 oz canned tomato sauce

- 2, 14.5 oz cans of chichen broth

- Grated Pecorino-Romano cheese


Directions

1- Cook the pasta and set aside.

2- In a large skillet, saute the onion, pancetta & red pepper flakes until the onion turns golden.

3- Mix in the peas, tomato sauce & chicken broth with S&P to taste.

NOTE: You do not have to add in all of the sauce & all of the chicken broth. Add a little bit of both into the mixture at a time to acquire your desired consistancy.

4- Add the cooked & drained pasta into the skillet & mix together with all of the ingredients.

5- Place in a serving bowl sprinkled with the olive oil & the grated cheese.
